Description

Cottage cheese pancakes bring a perfect balance of flavor, nutrition, and texture to your breakfast table. Light, fluffy, and rich in protein, they make a fantastic alternative to traditional pancakes. 


Ingredients

  • 1 cup cottage cheese (preferably full-fat for creaminess)
  • 2 large eggs
  • ½ cup all-purpose flour (or oat flour for a healthier option)
  • 1 tablespoon sugar (or honey for natural sweetness)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1 tablespoon melted butter or vegetable oil (for cooking

Optional Add-Ins:

  • ½ teaspoon cinnamon for warmth
  • ½ cup blueberries or chopped bananas for natural sweetness
  • 1 tablespoon flaxseed meal for extra fiber
  • ¼ cup chopped nuts for crunch


Instructions

 

Start by adding the cottage cheese to a large mixing bowl. Crack the eggs into the bowl and whisk them together with the cottage cheese. Stir until well combined, but leave small lumps for texture.

Next, add sugar (or honey), vanilla extract, and melted butter to the mixture. Stir until the wet ingredients blend smoothly.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture, stirring gently to prevent overmixing.

Place a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil to prevent sticking. Let the pan heat for about a minute before adding the batter.

Spoon about ¼ cup of batter onto the hot pan for each pancake. Use the back of the spoon to spread the batter slightly into a round shape.

Cook for 2–3 minutes until small bubbles start to form on the surface and the edges look set.

Flip the pancakes carefully with a spatula and cook for another 2 minutes, or until they turn golden brown. 

Repeat this process with the remaining batter, adding more butter or oil if needed.


Notes

To get cottage cheese pancakes just right, start with good-quality cottage cheese. If it’s too watery, drain off the excess liquid first — this helps keep your batter the right consistency. When mixing, don’t overdo it.

Want to make them gluten-free? Swap in almond flour or oat flour instead of regular flour — they both work great and add a nice flavor twist.
