Set your oven to 350°F (175°C) and line a baking sheet with parchment paper
In a large mixing bowl, combine the almond flour, baking soda, and salt. Use a whisk or fork to break up any lumps and evenly distribute the leavening.
Add the melted coconut oil or butter to the dry mix, followed by the maple syrup (or honey), egg, and vanilla extract. Stir everything together until a soft, cohesive dough forms.
Toss in your chocolate chips or chunks and stir to combine. If the dough is still very soft, you can chill it for 10–15 minutes before scooping.
Using a tablespoon or a cookie scoop, scoop out dough balls and place them on your prepared baking sheet.
Roll them gently between your hands if needed and flatten each ball slightly with your palm.
Slide your tray into the preheated oven and bake for 10–12 minutes.
Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes.
