  • 2 cups (250 g) all purpose flour
  • 1/4 cup (50 g) light brown sugar
  • 1 tablespoon  baking powder
  • 1 1/2 teaspoons  ground cinnamon
  • 1/2 teaspoon  salt
  • 1/2 cup (115 g) cold unsalted butter cut into small cubes
  • 1 medium  tart apple peeled and cut into small cubes (about 1 cup)
  • 1/2 cup (120 ml)  cold heavy cream plus 1 tablespoon for brushing
  • 1 large  egg
  • 1 teaspoon  vanilla extract
Topping
  • 1 tablespoon  coarse sugar
  • 1/2 teaspoon  ground cinnamon
Cinnamon glaze
  • 1 cup (120 g) powdered sugar
  • 2 to 3 tablespoons  milk
  • 1/2 teaspoon  vanilla extract
  • Pinch of ground cinnamon

Method

  1. Heat the oven to 400 F (200 C) and line a baking sheet with parchment.
  2. Whisk the flour, brown sugar, baking powder, cinnamon and salt in a large bowl.
  3. Rub in the cold butter until the mixture looks like coarse crumbs with some pea sized pieces left.
  4. Fold in the diced apple. Whisk the cream, egg and vanilla, pour over the dry mixture and stir until a shaggy dough forms.
  5. Pat the dough into an 8 inch round, 1 1/2 inches thick, and cut it into 8 wedges.
  6. Place the wedges on the baking sheet, brush with cream and sprinkle with cinnamon sugar. Bake for 20 to 25 minutes until golden.
  7. Cool for 15 minutes. Whisk the glaze ingredients and drizzle over the warm scones.
