Preheat and Prep Preheat oven to 425°F. Line a baking sheet with parchment paper. Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko mixed with parmesan, garlic powder, smoked paprika, onion powder, salt, and pepper.
Slice the Avocado Halve the avocados, remove the pit, and peel off the skin. Cut each half into 3–4 slices depending on size.
Coat Each Slice Dredge each slice in flour, dip in egg letting excess drip off, then press firmly into the panko mixture until all sides are coated. Place on the prepared baking sheet with space between each slice.
Oil and Bake Spray the tops lightly with cooking spray or drizzle with olive oil. Bake for 15–18 minutes, flipping carefully at the halfway point, until the coating is golden and set.
Serve immediately with your dipping sauce of choice.
