Baked Cinnamon Apple Bread Pudding

Ingredients
  

  • 8 cups cubed day old bread such as brioche or French bread
  • 2 large  apples cored and thinly sliced
  • 4 large  eggs
  • 2 cups  milk
  • 1/2 cup  heavy cream
  • 1/2 cup  brown sugar plus more for topping
  • 1 tablespoon  ground cinnamon divided
  • 1/2 teaspoon  ground nutmeg
  • 1 teaspoon  vanilla extract
  • 1/4 teaspoon  salt
  • 2 tablespoons  butter melted

Method
 

  1. Grease a 9-by-13-inch dish. Add the cubed bread and tuck apple slices throughout.
  2. Whisk together the eggs, milk, cream, brown sugar, half the cinnamon, nutmeg, vanilla, and salt. Pour over the bread and apples, pressing gently.
  3. Let sit at least 20 minutes, or refrigerate covered overnight.
  4. Preheat the oven to 350°F. Drizzle with melted butter and sprinkle with remaining cinnamon and extra brown sugar.
  5. Bake 40 to 45 minutes, until golden and mostly set in the center. Tent with foil if browning too fast.
  6. Rest 10 minutes before slicing and serving.

Notes

Store covered in the fridge up to 4 days, or freeze baked and cooled up to 2 months. Reheat covered in a low oven.
