- Start by preheating your oven to 400°F and lining a flat baking sheet with a piece of parchment paper to ensure the pastry doesn’t stick to the tray.
- Use several clean paper towels to pat the block of feta thoroughly until every side is completely dry and free of any residual brine moisture.
- Carefully layer four sheets of filo pastry on top of each other on your baking sheet, making sure to brush each individual layer with a generous mix of melted butter and olive oil.
- Place the prepared dry cheese in the very center of your stack and fold the pastry edges over it like a tight gift parcel, then place it seam-side down on your tray to keep it secure.
- Place the tray in the oven for 15 to 20 minutes, watching closely for the pastry to turn a deep, dark golden brown and become very light and flaky to the touch.
- While the parcel is still piping hot from the oven, drizzle the honey slowly over the top and finish with a heavy sprinkle of toasted sesame seeds for added crunch and flavor.
Notes
To make this dish even better, try toasting your sesame seeds in a dry pan for a minute before using them. The heat wakes up the natural oils and makes them much more fragrant. You can also experiment with the honey; a spicy hot honey adds a fantastic kick that balances the richness of the cheese. If you want more texture, add a handful of crushed walnuts or pistachios along with the sesame seeds.
