BBQ Tofu Skewers

Ingredients
  

  • 2 blocks (14 ounces each) extra firm tofu pressed and cut into thick squares
  • 2 tablespoons  neutral oil
  • Wooden or metal skewers
For the BBQ sauce
  • 1 cup  ketchup
  • 3 tablespoons  brown sugar
  • 2 tablespoons  apple cider vinegar
  • 1 tablespoon  soy sauce or tamari
  • 1 teaspoon  smoked paprika
  • 1 teaspoon  garlic powder
  • 1/2 teaspoon  onion powder
  • 1/4 teaspoon  black pepper

Method
 

  1. Press the tofu for at least 20 minutes, then cut each block into thick squares, about six pieces per block.
  2. Whisk together the ketchup, brown sugar, vinegar, soy sauce, smoked paprika, garlic powder, onion powder, and black pepper in a saucepan. Simmer 5 minutes, stirring occasionally, until slightly thickened. Set aside a portion for serving.
  3. Thread the tofu onto skewers, leaving small gaps between pieces. Brush lightly with oil, then with a thin coat of BBQ sauce.
  4. Heat a grill pan or outdoor grill to medium high. Grill 2 to 3 minutes per side without moving, until char marks form.
  5. Brush on a second coat of sauce during the last minute on each side. Rest 1 minute before serving with the reserved sauce.

Notes

Store leftover tofu in the fridge up to 4 days and extra sauce separately up to a week. Reheat tofu in a dry pan, not a microwave, to keep it crisp.
