Cabbage Caesar Salad

Ingredients
  

  • 1/2 cup  mayonnaise
  • 2 tablespoons  capers drained and finely chopped
  • 1 tablespoon  caper brine
  • 2 cloves  garlic minced
  • 1 tablespoon  Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons  nutritional yeast
  • 1 teaspoon  white miso paste
  • Salt and black pepper to taste
  • Water, as needed to thin
For the salad
  • 1 small  green cabbage cored and thinly shredded
  • 1 cup  croutons
  • 1/3 cup  shaved parmesan
  • Extra black pepper, for serving

Method
 

  1. Whisk together the mayonnaise, capers, caper brine, garlic, Dijon mustard, lemon juice, nutritional yeast, and miso until smooth. Season with salt and pepper, and thin with water if needed.
  2. Core and thinly shred the cabbage.
  3. Toss the cabbage with about half the dressing. Let sit 5 to 10 minutes.
  4.  Add more dressing to taste, then toss in the croutons and half the parmesan.
  5. Plate and top with remaining parmesan and black pepper. Serve immediately.

Notes

Store dressing separately in the fridge up to a week. Undressed cabbage keeps up to 5 days. Best eaten within a few hours once croutons are mixed in.
