Chickpea Pancakes Recipe

Ingredients
  

  • 1 cup  chickpea flour gram flour / besan
  • 3/4 cup  water  add more for a thinner pancake
  • 1 tablespoon  olive oil plus more for cooking
  • 1/2 teaspoon  salt
  • 1/2 teaspoon  cumin
  • teaspoon  turmeric
  • 1/4 teaspoon  garlic powder
  • 1/4 teaspoon  black pepper
  • 1/4 teaspoon  red chili flakes optional
  • 2 tablespoons  fresh cilantro or parsley, finely chopped
  • 2 spring onions finely sliced

To serve:

  • Plain yogurt or labneh
  • Hot sauce or chili sauce
  • Sliced avocado
  • Fried or poached egg
  • Fresh lemon wedge

Method
 

  1. Whisk chickpea flour, salt, cumin, turmeric, garlic powder, pepper, and chili flakes in a bowl. Add water and olive oil and whisk until smooth with no lumps. Stir in cilantro and spring onions. Cover and rest 20 minutes at room temperature — do not skip this step.
  2. Heat a non-stick or cast iron skillet over medium heat. Add a small amount of oil and let it heat until it shimmers. Medium heat is key — too low and the pancake cooks slowly and turns pale; too high and the outside chars before the inside sets.
  3. Pour about 1/4 cup of batter into the center of the pan. Let it spread naturally into a circle about 5–6 inches wide. Cook 3–4 minutes without moving until the edges look dry and set, bubbles appear across the surface, and the bottom is golden when lifted slightly.
  4. Flip with a wide spatula. Cook 2–3 minutes on the second side until golden-brown on both surfaces. Press the center gently — it should feel firm, not soft and spongy. Transfer to a plate and cover loosely to keep warm. Repeat with remaining batter.
  5. Serve hot with yogurt or labneh, sliced avocado, a squeeze of lemon, and hot sauce on the side.

Notes

  • Rest the batter 20 minutes minimum — it prevents a gummy interior
  • Don’t flip early — wait until edges look fully dry and set or the pancake will tear
  • For thinner crepe-style pancakes: add an extra 1/4 cup water and swirl batter in the pan immediately after pouring
  • Add grated zucchini or carrot (squeezed dry) to the batter for more substance
  • Batter keeps in the fridge for up to 2 days — whisk before using
  • Cooked pancakes keep for up to 3 days — reheat in a dry pan 1–2 minutes per side
  • Freeze cooked pancakes between parchment sheets for up to 2 months
