Cinnamon Waffles

Ingredients
  

  • 2 cups  all-purpose flour
  • 2 tablespoons  sugar
  • 1 tablespoon  baking powder
  • 1 1/2 teaspoons  ground cinnamon
  • 1/2 teaspoon  salt
  • 2 large  eggs
  • 1 3/4 cups  milk
  • 1/3 cup  melted butter plus more for the waffle iron
  • 1 teaspoon  vanilla extract
  • Butter and maple syrup, for serving

Method
 

  1. Whisk together the flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  2. In a separate bowl, whisk the eggs, then add the milk, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined. A few small lumps are fine.
  4. Preheat and butter the waffle iron. Pour in batter and cook until deeply golden and easy to release, 4 to 5 minutes.
  5. Transfer waffles to a wire rack to keep them crisp. Repeat with remaining batter.
  6. Serve hot with butter and maple syrup.

Notes

Store leftovers in the fridge up to 3 days, or freeze up to 2 months. Reheat in a toaster or oven, not a microwave, to keep them crisp.
