Method
- Whisk together the flour, sugar, baking powder, cinnamon, and salt in a large bowl.
- In a separate bowl, whisk the eggs, then add the milk, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir just until combined. A few small lumps are fine.
- Preheat and butter the waffle iron. Pour in batter and cook until deeply golden and easy to release, 4 to 5 minutes.
- Transfer waffles to a wire rack to keep them crisp. Repeat with remaining batter.
- Serve hot with butter and maple syrup.
Notes
Store leftovers in the fridge up to 3 days, or freeze up to 2 months. Reheat in a toaster or oven, not a microwave, to keep them crisp.
