Cottage Cheese Flatbread Recipe

Ingredients
  

  • 1 cup  cottage cheese (full-fat or low-fat)
  • 1 1/2 cups  all-purpose flour
  • 1 teaspoon  baking powder
  • 1/2 teaspoon  salt
  • 1 olive oil
  • 2 tablespoons  plain yogurt or milk

Method
 

  1. Start by placing the cottage cheese in a blender. Blend until smooth, ensuring there are no large curds. 
  2. In a mixing bowl, combine the flour, baking powder, and salt. Stir them together using a whisk or fork to evenly distribute the baking powder and salt. If you’re adding extra seasoning like garlic powder, dried oregano, or any other herbs, mix them in now.
  3. Add the blended cottage cheese, egg, and olive oil to the dry ingredients. Use a silicone spatula to mix everything together. The dough may seem dry at first, but keep stirring. If the mixture isn’t coming together properly, gradually add the yogurt or milk, one tablespoon at a time.
  4. Lightly flour a clean surface and transfer the dough onto it. Knead it for about 3-5 minutes, pressing and folding it with the heels of your hands. The dough should feel smooth and elastic but not sticky.
  5. Cut the dough into 4-6 equal portions using a stainless steel bench scraper, depending on the size of flatbread you want. Roll each portion into a ball, then flatten it slightly with your hands. Using a rolling pin, roll each piece into a circle or oval shape about 1/4-inch thick.
  6. Allow the pan to warm up for a minute before placing the first flatbread in it. Place the flatbread in the pan and cook for 2-3 minutes. Flip the flatbread using a spatula and cook the other side for another 2-3 minutes. If the bread puffs up, gently press it down with a spatula to ensure even cooking.
  7. Enjoy the warm, freshly made flatbread as soon as possible for the best texture and flavor. It pairs well with hummus, tzatziki, or any dip of your choice.

Notes

  • Use fresh cottage cheese to prevent excessive moisture in the dough. If your cottage cheese has too much liquid, drain it using a fine-mesh sieve before blending.
  • For a crispier texture, cook the flatbread slightly longer or finish it in the oven at 350°F for 5 minutes.
  • Experiment with flavors by adding ingredients like chopped fresh herbs, grated cheese, or a sprinkle of sesame seeds to the dough before rolling it out.
  • For a gluten-free version, use a gluten-free flour blend. Keep in mind that the texture may vary slightly.
