Method
- Preheat the oven to 350°F. Grease a 9-inch round pan and line the bottom with parchment. Whisk together the flour, baking powder, and salt.
- Beat the butter and sugar until fluffy. Beat in the eggs one at a time, then the vanilla.
- Alternate adding the dry ingredients with the sour cream and milk, mixing just until combined. Fold in the apples.
- Spread the batter in the pan. Mix the topping sugar and cinnamon and sprinkle over the top.
- Bake 45 to 55 minutes, until golden and a toothpick comes out clean. Cool 15 minutes in the pan, then turn out and serve.
Notes
Store covered at room temperature up to 3 days, in the fridge up to a week, or freeze up to 2 months.
