Green Goddess Dressing Recipe

Ingredients
  

  • 1 ripe avocado halved and pitted
  • 1/2 cup  fresh parsley leaves
  • 1/4 cup  fresh basil leaves
  • 2 tablespoons  fresh chives roughly chopped
  • 1 clove  garlic
  • 3 tablespoons  lemon juice about 1 large lemon
  • 2 tablespoons  olive oil
  • 1/4 cup  Greek yogurt or sour cream
  • 2–3 tablespoons   water to thin as needed
  • 1/2 teaspoon  salt
  • 1/4 teaspoon  black pepper

Method
 

  1. Prep Your Ingredients Check that your avocado is ripe — it should give slightly when pressed. Wash herbs and strip parsley from any thick stems.
  2. Blend Add avocado, parsley, basil, chives, garlic, lemon juice, olive oil, Greek yogurt, and 2 tablespoons of water to a blender or food processor. Blend on high until completely smooth, scraping down the sides as needed.
  3. Adjust the Texture If the dressing is too thick, add remaining water one tablespoon at a time and blend again until you reach your preferred consistency.
  4. Taste and Season Taste the dressing. Add more lemon juice for brightness, more salt if it tastes flat, or a small extra spoon of Greek yogurt to mellow the herb flavor.
  5. Chill and Serve Use immediately or refrigerate for 20–30 minutes for best flavor. Stir before serving.

Notes

  • Press plastic wrap directly against the surface before sealing to keep it green longer
  • Keeps in the fridge for up to 4 days
  • Swap Greek yogurt for tahini to make it dairy-free
  • Add a teaspoon of white miso for extra depth
  • Does not freeze well due to the avocado
