Pumpkin Cookies

Ingredients
  

  • 1 3/4 cups  all-purpose flour
  • 1 teaspoon  baking powder
  • 1/2 teaspoon  baking soda
  • 1 1/2 teaspoons  ground cinnamon
  • 1/4 teaspoon  ground nutmeg
  • 1/4 teaspoon  salt
  • 1/2 cup  unsalted butter softened
  • 1 cup  granulated sugar
  • 1 cup  pumpkin puree
  • 1 large  egg
  • 1 teaspoon  vanilla extract
For the frosting
  • 4 ounces  cream cheese softened
  • 1/4 cup  unsalted butter softened
  • 1 1/2 cups  powdered sugar
  • 1/2 teaspoon  vanilla extract
  • Ground cinnamon, for dusting

Method
 

  1. Preheat the oven to 350°F and line two baking sheets with parchment. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  2. Beat the butter and sugar until light and fluffy. Add the pumpkin, egg, and vanilla, and beat until combined.
  3. Mix in the dry ingredients just until no streaks remain. The dough will be soft.
  4. Scoop into rounded portions and space on the baking sheets. Bake 12 to 14 minutes, until edges are set.
  5. Cool completely, then beat the cream cheese, butter, powdered sugar, and vanilla into a frosting.
  6. Frost the cooled cookies and dust with cinnamon.

Notes

Store frosted cookies in the fridge up to 5 days. Unfrosted cookies keep at room temperature up to 3 days, or freeze up to 2 months.
