Method
- Preheat the oven to 350°F and line two baking sheets with parchment. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Beat the butter and sugar until light and fluffy. Add the pumpkin, egg, and vanilla, and beat until combined.
- Mix in the dry ingredients just until no streaks remain. The dough will be soft.
- Scoop into rounded portions and space on the baking sheets. Bake 12 to 14 minutes, until edges are set.
- Cool completely, then beat the cream cheese, butter, powdered sugar, and vanilla into a frosting.
- Frost the cooled cookies and dust with cinnamon.
Notes
Store frosted cookies in the fridge up to 5 days. Unfrosted cookies keep at room temperature up to 3 days, or freeze up to 2 months.
