Ingredients
  

  • 1 cup  all-purpose flour
  • 1/2 cup  granulated sugar
  • 2 teaspoons  baking powder
  • 1 1/2 teaspoons  pumpkin pie spice
  • 1/4 teaspoon  salt
  • 1/2 cup  pumpkin puree
  • 1/2 cup  milk
  • 4 tablespoons  unsalted butter, melted
  • 1 teaspoon  vanilla extract
For the topping
  • 1 cup  chopped pecans
  • 3/4 cup  brown sugar
  • 1 1/4 cups hot water
  • 1 teaspoon  ground cinnamon
For serving
  • Vanilla ice cream
  • Caramel sauce, optional

Method
 

  1. Preheat the oven to 350°F and grease a 9-inch pie dish. Whisk together the flour, granulated sugar, baking powder, pumpkin pie spice, and salt.
  2. Stir together the pumpkin, milk, melted butter, and vanilla. Combine with the dry ingredients just until no streaks remain.
  3. Spread the batter in the dish. Sprinkle with the pecans, brown sugar, and cinnamon.
  4. Pour the hot water gently over the top without stirring.
  5. Bake 40 to 45 minutes, until golden and set, with the sauce bubbling at the edges.
  6. Rest 10 to 15 minutes, then serve warm with vanilla ice cream and caramel sauce if desired.

Notes

Store covered in the fridge up to 4 days, or freeze baked and cooled up to 2 months
