White Bean Gratin

Ingredients
  

  • 2 tablespoons  olive oil
  • 1 small  yellow onion finely chopped
  • 4 cloves  garlic minced
  • 3 (15 ounce) cans white beans such as cannellini or great northern, drained and rinsed
  • 1 cup  vegetable broth
  • 3/4 cup  heavy cream
  • 1 tablespoon  fresh thyme leaves plus more for garnish
  • Salt and black pepper to taste
  • 1 1/2 cups  shredded gruyere or fontina cheese
  • 1/4 cup  grated parmesan
  • Crusty bread, for serving

Method
 

  1. Heat the olive oil in an oven safe skillet over medium heat. Cook the onion until soft, about 5 minutes, then add garlic and cook 30 seconds.
  2. Add the beans, vegetable broth, heavy cream, and thyme. Season with salt and pepper and simmer about 5 minutes, until slightly thickened.
  3. Preheat the broiler. Remove the skillet from heat and top with the gruyere or fontina, then the parmesan.
  4. Broil 3 to 5 minutes, watching closely, until the cheese is melted and golden in spots.
  5. Let rest a few minutes, garnish with extra thyme, and serve with crusty bread.

Notes

Store leftovers in the fridge up to 4 days. Reheat in a low oven rather than a microwave. Not recommended for freezing.
